Safflower is an annual herb used in traditional Chinese herbal medicine. It consists of the dried flowers of the Compositae plant safflower. A natural pigment named safflower yellow (SY) can be extracted from safflower petals. Chemically, SY is a water-soluble flavonoid and the main active ingredient of safflower.Â
Common Applications:
- Menstrual Disorders: Safflower is often included in herbal formulas to treat irregular periods, painful menstruation, or to stimulate menstruation in cases of delayed periods.
- Cardiovascular Health: It is believed to help with conditions related to blood circulation, such as angina or coronary artery disease.
- Injuries and Trauma: Safflower is applied externally or taken internally to help with pain and swelling from physical injuries.
Precautions:
Pregnancy: Safflower is contraindicated during pregnancy as it can stimulate uterine contractions and potentially cause miscarriage.
Taste Profile and Culinary uses
Safflower petals can be steeped in water to extract a yellow dye, which is then used to colour a variety of foods, including rice, desserts, and sauces.
While a lot of safflowers are grown to produce dye, they are also a staple in the culinary world. Chefs and home cooks across the globe use the plant in sweet and savory dishes, dressings, and teas. Unlike bolder edible flowers, like rose petals or rose extract, safflower petals have a mellow flavour with subtle notes of nut and sweet chocolate.
Safflower is sometimes called “poor man’s saffron” because it can be used as a less expensive alternative to saffron, especially for adding colour to dishes like rice, soups, and stews, though it lacks the distinct flavour of saffron.
